Girasoles

And speaking of ‘silly’, oh I know all this must make me a very silly girl... but it’s true—long long ago, I found me a friend named Peter Pan and decided to keep him. We’ve been happily together ever since that day! Now, this Peter Pan of mine has been craving (and begging for) some banana bread.... Out of the oven super delicious banana bread! But I’ve been relentless! “No time for baking”—I’d say. This morning though, he sat in his chair by the kitchen window and fiddled at a tune that he knows I like... a jolly old tune that he plays by ear and to me is like an enchantment, or more like a magical spell, because whenever I hear it I’d do whatever it takes to please this Peter Pan of mine... thus, I decided it was time to bake! Beside, there is nothing better than a lovely spring morning and a clean kitchen to get me baking...

Do you lose things in your pantry? Oh I do that sometimes! This morning while collecting my ingredients, I found these cute mini Bundt cake pans among the few things forgotten in my pantry... Perfect timing I’d say!
I got these super small Bundt cake pans at a thrift store awhile back, and totally forgot I had them. They’re the perfect size if you’re counting calories... the only problem is: Can you eat just one portion?
Do you like sharing recipes? Some people don't. What is up with that? Sharing recipes brings friends together... I feel like if you have something that can bring someone a little bit of joy why not share? Ingredients
  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour
Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

Oh and did I tell you I've planted girasoles this year? I did! Zillions of Sunflowers! Only problem is I didn’t have any available space for them other than in Mr. Peter Pan’s veggie boxes… sooooo, that’s where I planted them! Oh boy! Wait until he finds out what I did! ;) I shouldn’t have done that you see! Those boxes are absolutely Mr. Peter Pan’s dealings and I don’t have any business planting flowers in it—just veggies. Can humans eat sunflowers? Cause I might have to eat them! Ayayai! ;)

  1. Well, of course they can eat Sunflower SEEDS...it is the newest vegetable-did you not know?

    My son loves banana bread and I am always trying recipes for him..and have given a couple to his wife...so that she might be the love-of-his-life-that-bakes-his-bread. A blessed daughter-in-love for me!

  2. It's funny you posted about this, Cielo, because my husband and I were just talking about why some people do not share recipes. I do not understand it, either. I always share when people ask. I am still enjoying your apple bread you posted last winter. I appreciate it that you are a sharing person!

WELL WELL IS A GOOD WAY TO PUT IT WE DONT SHARE RECIPES.THIS IS MY REASON I NEED TO KNOW HOW TO DO THE HALF OF CUPS AND I WILL TRIEND 1/4 OF CUP.UPSSS I THINK I CAN LEARN...I DONT COOK MUCH AT ALL I AM MOSTLY VEJETERIAN.I LIVE ALONE MY PRINCE FRONG IS AWAY WORKING IN FAR AWAY LANDS HE HAS NOT CAME TO HIS CASTLE IN 2MONTHS..HE WIIL NEXT JULY FOR OUR ANIVERSERY #26.MY CHILDREN DO NOT LIVE AT HOME SO I JUST COOK FOR MY SELF SOME TIMES.I ADMIRE ALL OF YOU LADY'S CIELITO YOU ARE ALLWAY'S MAKING EVERYTHING MAGICAL.   6. you're so right! What IS up with that? Your banana bread looks so good and I just happen to have one turning brown on my kitchen countertop, so I think banana bread is in my future! Thanks for the sweet (yum) inspiration :)
